Pimento Cheese Deviled Eggs


Chef Erika is a bit of a retro gal.  She loves her some Elvis; collects lunch boxes and occasionally spins vinyl.  This recipe fits her profile and is a staple in impromptu casual gatherings with friends.  You'll find it pairs well with many of our wines!

6 hard-cooked eggs, peeled, cut in half, yolks mashed in a bowl

½ cup Debb’s Pimento cheese

¼ cup mayonnaise

2 teaspoons Dijon mustard

2 teaspoons chopped celery

Salt and pepper

Chopped pimentos for garnish


Combine the thoroughly mashed yolks with the cheese, mayonnaise, mustard and celery. Taste, then season with salt and pepper. Fill the whites evenly with the mixture and garnish with chopped pimentos.
